Quinoa Salad

1 1/3 cups quinoa
2 3/4 cups water
1/2 cup green peppers; diced
1/2 cup black olives; diced
1/3 cup onion; diced
1/2 cup tomato; diced
1 tablespoon Balsamic vinegar
3 tablespoon olive oil
1 tablespoon oregano
1 tablespoon garlic powder
salt and pepper; to taste

Cook the quinoa in the water, then let cool.
In a bowl combine peppers, olives, onion and tomatoes.
Add the quinoa.
In a jar combine olive oil, vinegar, garlic powder and oregano. Shake well and pour over quinoa mixture.
Add salt and pepper to taste.
