Rhubarb Walnut Bread
Rhubarb Walnut Bread
1/2 cup honey
1/3 cup oil
1 Large egg
1 teaspoon vanilla
1/2 cup milk
1 1/4 cup whole wheat flour
1/2 teaspoon baking soda
3/4 cup rhubarb; sliced thin
1/4 cup walnuts; chopped

Preheat oven to 325°F. Grease a bread loaf pan.
Combine all wet ingredients in a large bowl. Mix well.
Add dry ingredients, mix well. Add the rhubarb and walnuts and stir until well blended.
Pour into prepared loaf pan.
Bake 50 to 60 minutes, until a knife inserted in the center comes out clean.
Remove from pan and cool on a wire rack.


  1. My rhubarb is ready and I can't wait to make this. It will be perfect when I have the "girls" over for coffee.
