Pickled Garlic Scapes

Garlic scapes are a little bonus of garlic plants, and have many uses. Here is one of our favorite ways to enjoy them.

hot peppers
thyme
honey
vinegar

This is a very flexible recipe and can be fitted to whatever size jar you want to make.

Fill jar with sliced garlic scapes (take care not to get the tough ends), hot peppers (however many you like....we use only one in a pint jar), some thyme, and a little honey.

Fill jar with vinegar of your choice. We have used apple cider vinegar and white wine vinegar.

Store in the refrigerator. Let sit a few weeks before eating. They will be very spicy.

Great in a stir fry or salads, or with marinated meats...there are so many possibilities.

This recipe is very similar to our pickled egg recipe.

  1. thanks for this! our garlic crop has just put up its scapes, as we planted it this spring. i wanted to pickle a bunch of them and was looking for a good idea...and this sounds wonderful.

  4. I apologize; not being a native speaker I don't know what scapes mean. Cannot find it in the dictionary. Could anyone explain it to me please?

  5. It's the part of the garlic plant that forms the seed pod at the top of the plant. If left to grow it will go to seed and produce lots of little tiny garlic cloves (which can be used in cooking). The stem part has a strong garlic taste and is tender enough to be eaten. I wish I could send you a photo, but wrong time of the year!
