Zucchini Relish

Zucchini Relish
Zucchini Relish
8 cups (packed) zucchini; grated
1 tablespoon hot pepper flakes
2 cups onion; chopped
2 tablespoon salt
water
1 3/4 cups apple cider vinegar
1/4 cup honey
2 tablespoon prepared horseradish
1 teaspoon turmeric
1 teaspoon mace

Combine zucchini, hot pepper flakes, onion and salt in a large bowl.
Mix well and cover with cold water. Cover bowl with a plate and let sit over night.

Pour mixture into a colander and rinse well. Weigh down the mixture with a plate (we set a clean brick on top of the plate) and let sit about 30 to 45 minutes.

Combine the vinegar, honey horseradish and spices in a large kettle and bring to a boil.
Add in the drained zucchini mixture and stir well.

Let cook about 5 minutes, stirring often.

Makes 2 quarts.

If you would like to can this relish process in a hot water bath for 5 minutes.

  3. Emily, It is a bit spicy, depending upon the strenght of your horseradish and also the red pepper flakes. If you don't like spicy you can leave out the hot pepper flakes and even the horseradish, if you wanted.

  4. Thanks Nancy. We actually like a bit of spice. This recipe looks wonderful and I will give it a try in a few months when the zucchini start to come in. I am planting a garden for the first time and am looking forward to all the wonderul things. Thanks, Emily

  7. um...is that made with green zucchini, or the yellow? Does it matter which you use and will there be a difference in taste?

    1. Debbie, If you don't like the taste of horseradish, then it would probably taste too strong. I know with things that have peanut butter in them I don't like, even though people who like peanut butter will say they can't taste it. Just leave the horseradish out.

      I have only made this with the green zucchini, so I am not sure how the taste would be with the yellow. I think it would be okay because of the spices. Maybe try a smaller batch.
