Pork with Rhubarb and Maple Syrup

Last night we wanted a quick, easy, yet different meal. We came up with this idea for the pork. It was delicious!

Place pork in a baking dish. Sprinkle with thyme. Cut rhubarb into 1/2" pieces and cover the pork with them. Add a little fresh ginger and drizzle maple syrup over the top.

Bake, covered, at 350°F until pork is done

Easy Baking Recipes: Corn Bread

1 cup corn meal
1 cup flour
1 tablespoon baking Powder
1 tablespoon honey
1 Large egg
1 1/2 cups milk
4 tablespoon butter; melted

Preheat oven to 425°F. Grease an 8 or 9 inch cast iron skillet.
Place all ingredients in a large bowl and mix well.
Pour in to skillet and bake 20 to 25 minutes.
