Peanut Butter Molasses Cookies

Peanut Butter Molasses Cookies

1/2 cup butter; room temperature
1/2 cup sugar
1/2 cup peanut butter
1/3 cup molasses or birch syrup
1 large egg; room temperature
2 cups flour
2 teaspoon baking powder
1/4 teaspoon baking soda

Preheat oven to 375°F. Lightly grease a cookie sheet.

Cream together butter and sugar.

Add peanut butter, molasses or birch syrup and egg. Mix well.Wet Ingredients For Peanut Butter Molasses Cookies

Combine dry ingredients and add to the peanut butter mixture. Stir well.

Drop by teaspoonfuls on to cookie sheet. Flatten with moist fingers.

Bake 8 to 10 minutes. Remove onto a wire rack to cool.

Yield about 40 cookies.

  1. This sounds wonderful, I must make them soon. We're finishing off a batch of chocolate chip right now and I'm really craving gingerbread, but these will go on the list.

  3. I threw in a little honey to sweeten them up, but they turned out AMAZING. Soft and chewy with a great flavor. I couldn't taste a lot of the peanut butter but they were still great, nice smokey molasses flavor throughout. Truly only use a teaspoon to measure out the cookies, they are pretty thick. Also be sure to flatten them as they do not puff or spread out on their own and you will end up with a little molasses cookie ball. :)
