Not being a fan of feta, I substituted 1/2 pound freshly grated parmesan. Not finely grated but chunky grated. And it was excellent. It's the perfect comfort-food on these dark, chilly evenings. A few slices of toasted fresh garlic bread didn't hurt either.
ReplyDeleteLord Wellbourne, nice touch. I know a lot of people don't like feta and the parmesan is an excellent substitution. We eat a lot of different mac and cheeses; so easy and yummy. I have a recipe (that I have not tried yet) for a baked mac and cheese made with beer. I will have to try it one of these nights.
