Peanut Butter Molasses Cookies
1/2 cup butter; room temperature
1/2 cup sugar
1/2 cup peanut butter
1/3 cup molasses or birch syrup
1 large egg; room temperature
2 cups flour
2 teaspoon baking powder
1/4 teaspoon baking soda
Preheat oven to 375°F. Lightly grease a cookie sheet.
Cream together butter and sugar.
Add peanut butter, molasses or birch syrup and egg. Mix well.
Combine dry ingredients and add to the peanut butter mixture. Stir well.
Drop by teaspoonfuls on to cookie sheet. Flatten with moist fingers.
Bake 8 to 10 minutes. Remove onto a wire rack to cool.
Yield about 40 cookies.
